Hey pretties! Ever since my mom’s Mediterranean themed surprise going away party, Eric and I have been on a huge Hummus kick. When I saw this recipe on pinterest, I thought we should give it a try!
Ingredients
- 4 boneless, skinless chicken breasts
- Salt and Pepper
- 2 Zucchinis sliced and halved
- 2 Yellow Squash sliced and halved
- 1 Medium Onion sliced
- 1 cup Red Pepper Hummus (or any other hummus you like)
- 2 Tbsp. Olive Oil
- 2 Lemons (one thinly sliced, the other to squeeze)
- 2 tsp Paprika
- Preheat your oven to 450
- Season your Chicken Breasts with salt and pepper
- In a large bowl, toss your squash, zucchini, and onion with olive oil until it is all coated
- Spread your vegetables on the bottom of your baking dish and sprinkle salt and pepper over it
- Place your thinly sliced lemons on top of the vegetables
- Lay the four chicken breasts on top of the lemons and vegetables
- Spread your hummus over all of the chicken breasts, ensuring you get the sides as well
- Squeeze the juice from your second lemon over the chicken then cover with Paprika
- Put it in the oven for 25-30 minutes (Our chicken breasts were gigantor so they took about 35 min)
- Make sure your chicken is cooked thoroughly and your vegetables are tender.
- Serve immediately and enjoy!

I based a dinner off of this recipe tonight. I did all except the hummus. My husband really liked the chicken and for not being a veggie guy wasn’t pleasantly surprised at how much he liked the veggies. We did however have to cook the chicken for 45 minutes. I also will use a bit less lemon over the top of the chicken next time.

Good I’m so glad you guys liked it! I think cooking times depend a lot on the type of oven you have/how hot it gets… I know we have a gas oven and it gets really hot and cooks our food quickly too. I’m a big fan of lemon, but Eric was thinking less lemon next time too. I’m glad you were able to get the hubby to eat his veggies
